Instructions


1. Prepare the molds: Line a baking sheet with parchment paper or use lollipop molds, and place lollipop sticks in position.


2. Heat the sugar mixture: In a saucepan, combine the sugar, corn syrup, and water. Heat the mixture over medium heat, stirring continuously until the sugar has fully dissolved. After the sugar is dissolved, cease stirring and let the mixture come to a boil.


3. Monitor the temperature: Attach the candy thermometer to the side of the pan. Continue to heat the mixture until it reaches 300°F (150°C), also known as the hard-crack stage.


4. Add flavor and color: Once the sugar mixture reaches the desired temperature, remove it from the heat. Swiftly incorporate the flavoring extract and food coloring, if applicable. Exercise caution, as the mixture is extremely hot.


5. Pour into molds: Carefully pour the hot mixture into the prepared molds or onto the parchment paper, covering the ends of the sticks. Allow them to cool and solidify entirely for approximately 30 minutes.
